We have great empathy for independent restaurant
operators.
For 30 years of active food service I was one. During that
time we did it all -- airline catering, employee feeding,
fine dining, off premise catering and even a dinner train.
We handled every level of food service from blue collar through
serving Pope John Paul, Britain's Prince Charles, the family
of the King of Saudi Arabia, and numerous politicians, and
celebrities.
As a freelance writer I published over 1,000 weekly columns
and features on wine and food in national newspapers and periodicals.
I know the independent restaurant operator is immersed in
the day-to-day grind with little creative time to increase
sales with improved menus and staff training. Profits disappear
for lack of time to implement control systems on purchasing,
inventory, labor, and theft. Decisions are based on convenience
and lack of time, rather than maximizing sales and percentage
profits.
